Did you know National Pink Day was a thing?
June 23, 2022 is National Pink Day!
This is the perfect day for me because my absolute favorite color is pink, and so is my daughters! And we both love pancakes so what better way to enjoy the day than by making a batch of Mini Pink Pancakes! But honestly, this recipe can be made with a variety of colors if that is what you prefer! But for National Pink Day we will stick with the color pink!
What I love about this recipe is the fact that they’re mini pancakes! My daughter loves pancakes so much that when we make them we usually make a lot at one time so we can freeze them and she can have them for breakfast before school. Because let’s be honest, no one is making pancakes from scratch before on a weekday morning! But if you freeze them properly, they taste better than the frozen pancakes that you can purchase from the grocery store!
Although I love a huge pancake, I love that making mini’s you can make a lot at one time in the skillet if you have a larger skillet! And if you have a kitchen helper (one of your children) they will be able to easily learn to make pancakes by helping with smaller pancakes!
Mini Pink Pancakes
Ingredients
- 1 Cup All-purpose flour
- ½ Cup Milk
- 1 Egg Egg
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
- 2 drops Red food coloring
- 1 Pinch Salt
- 2 Tbsp. Vegetable oil
- 2 Tbsp. Honey
- 2 tsp Butter
- Large apple or banana for “hearts”
Instructions
- In a large bowl mix dry ingredients: mix flour, baking powder and salt
- In another bowl mix the egg, milk, honey, vanilla extract and vegetable oil.
- Pour the liquid mixture into a bowl with dry ingredients and mix it all together.
- Add 2 drops of red food coloring. Mix until you get the desired color.
- Put the dough in a pastry bag.
- Fry the pancakes on both sides on the pan with a little among of butter.
- Cut an apple (or banana) into thin slices and cut out a heart in the pulp using a cookie cutter. Put 5 pancakes and an apple or banana heart on top, stack it with a bamboo skewer.
