If you know me then you know I am a HUGE fan of breakfast! I can literally eat it any time of day! One of the things I love about being at home is that I can whip up some breakfast mid morning to eat! A recipe that I am currently in love with is the Air Fryer Breakfast Pizza!
During the pandemic we made a lot of breakfast! I mean full breakfasts, with a spread of fresh fruit, pancakes, biscuits, bacon and eggs…You name it we made it for breakfast! It was the best! It did a job on our waistlines but we still ate it and it was a comfort food for us! We all enjoyed breakfast so much that a lot of times we didn’t eat dinner because breakfast was so filling!
They say the best time to change something in your life is before the beginning of a new year. It’s a good time to purge, journal, set intentions, and so on! Honestly, I believe the best time to do it is anytime! I write set intentions as they come to me, I write in my journal as I am led to, and I will purge and change a routine when the spirit leads me to! I would say one of the best things about me is when I have a feeling, I tend to move on that spirit. The feelings aren’t something that I’ve always followed, because honestly a lot of time I second-guessed them. However, as I get older I realize that gut feeling or feeling in the pit of my stomach never steers me wrong! One of those feelings was that my time at my last job was coming close to the end, and those feelings were confirmed in November.
During the pandemic when we all worked from home, we all complained about how much we hated it…but honestly, I LOVED it! I loved being able to be home with my family and still work. We had lots of extra time together and I realized how much I was missing and loved that I could be there for them more and see how they’re “really” doing in school! At the end of the my time of working from home, and kept an eye on remote jobs, because in my heart I knew it was one of the best options for my family!
I started working from home recently and it has absolutely been the best career move EVER!!!
Air Fryer Breakfast Pizza
I have made this with the toppings shown, and I have made it with other items such as sausage, onions, spinach, ham, peppers, gouda or Colby-Jack cheese…it’s really like an omelet you have so many options you can choose! But my favorite go-to is Bacon, Eggs and Cheddar Cheese!

My husband and I often make enough breakfast meat for a full week because of our children! So after dropping them off at school I usually come home and prepare myself a nice breakfast to enjoy before I get my work day started or I enjoy something like this for lunch!
Air Fryer Breakfast Pizza’s are also something your children can help you make! Or if they’re old enough, as long as you have all of the ingredients they can make them on their own with the toppings of their choice!
I know for a lot of us, working from home has become the norm! Do you work from home, and if so what’s one thing that you love about working from home?
