Much like everyone else, this school year has been different! We have been in school for most of the school year and switched to virtual after Thanksgiving Break. And as of right now we will be virtual until mid-January. Last school year when we were virtual my son was still in preschool, so although he had scheduled meetings it was only once a week for a 1/2 hour, and the other school work he had to complete was usually stuff that I had given him to keep him busy. My husband was also home because he had recently had surgery, and my daughter was only online for a half-day. Fast forward to this year, my son in Kindergarten, and my daughter is in 2nd grade! And well I am working from home! Honestly, it sounds like a lot but actually, I feel like this school year there was more preparation and the online system works! Since my daughter’s schedule is pretty strict, my son is in school while she’s in school, our universal time we can all usually log off is from 12pm-1pm! LUNCHTIME!!!
I usually prep our lunch while they’re in their virtual meetings. I try to mix it up from day to day but I have learned there are a few things that stay in rotation for lunch, such as lunch meat sandwiches, pizza, chicken nuggets, and soup! As long as we are having a variation of one of these my children are pretty happy! Usually, I pick the main course and they choose the sides. You can have one fruit and one snack to go with the main course.
I often joke with anyone that calls my house around noon, that the “Lunch Lady” is busy! I call myself the lunch lady because once my children log off their computers at noon, they’re looking for lunch IMMEDIATELY! We usually eat for a half-hour, and I let them play in their rooms for the second half (so like recess or activity time)! When they play I usually finish up my lunch and work for the second portion of lunch because this time gives me a chance to focus while it’s quiet!
When we first started our virtual schedule, I would kind of “wing” lunchtime! Whatever came to mind is how I determined what we would have. I quickly realized that often came with interrogation at snack time about what we were having for lunch, as well as everyone putting in their request! I quickly put this to rest when I created a Lunchtime Menu! Much like what’s available for lunch at school, I created our schedule and the kids can go read on their own what’s for lunch that particular day! I even throw in a delivery day based on who has free delivery for that day!
Creating a Lunch Menu is pretty easy if you are aware of the things that are currently in your home! I base our lunches off what we currently have in stock, and sometimes I throw in my own surprise of having food delivered. What I love about the Lunch Menu kit is that it’s so easy to use, so if your school has been like ours and things have switched up mid-year you can use this menu, idealist, and lunch box notes if your child is in school, on a full virtual schedule or hybrid schedule!

Creating a quick and easy lunchtime routine can be pretty easy if you aren’t overthinking it! Find a couple of foods your children like and create different meals with them for lunch! One of our favorite things to eat is deli meat! I just started using Land O’ Frost® Premium Lunch Meats and Sub Kits and they have been a live saver! Ingredients
- 1 Footlong Sub Loaf
- 4-5 Slices Provolone Cheese
- 2-3 tbsp Muffaletta *Measure to your preference
- 4-5 Slices Land O’Frost® Premium Meat (Old World Style Black Forest Ham, Sliced Hard Salami, and Roast Beef)
Instructions
- Slice your Bread
- Add Muffaletta inside of bread(You can add to the top and bottom of sandwich, or to one side. This is your preference)
- Add Cheese to top of sandwich
- Add Meat (4-5 Slices of Each Type of Meat (this will depend on how big you would like your sandwich to be))
- Put Sandwich Together
- Slice Sandwich into Smaller Portions
- Enjoy!
Honestly, I am very pleased with my purchase of Land O’Frost Deli Meats! This was my first time purchasing it for my family, and they devoured the Italian Sub Sandwich! I love that the brand can be found at our local Meijer store, and it’s a family-owned brand! There was such a variety of flavors, I had a hard time narrowing down which ones I wanted to buy without buying them all!
