I think the saying is “when life gives you lemons, make lemonade” or in our case…make popsicles! HA! No seriously, for a while, I think I was in a depression about being in quarantine! I was upset about not being able to go about our plans to travel for Spring Break and Summer. However, after being home for this long period of time I have actually grown to love being at home with my family. It has its challenges when it comes to working full-time and dealing with children in school but overall its been fun. We’ve had countless movie nights, tried new recipes, taken car ride with no destinations…we’ve simply had a chance to enjoy our family without the hustle and bustle and now that I look back on these weeks it has actually been fun!
Darrick and I have had to go back to work on a modified schedule. It hasn’t been bad, but an adjustment since we both have been off for a while. The kids have adjusted well, but there is a level of separation anxiety on both (the kids and us) parts! However, as these numbers increase I feel like we will be back on lockdown soon, and honestly, I’m not mad about it! We have already started stocking our house again!
Now don’t get me wrong, do I miss my “me-time” yes, I wouldn’t be human if I didn’t! I miss date nights with my husband and going out for dinner and drinks with my friends. But when I look back at this quarantine time, it has been fun! We have had more good days that far outweigh our bad days. We are healthy, and we have everything we need so I count it all joy!
This summer we have had to think about our Summer activities differently than we usually do! We are having fun this year making popsicles. We have made a few variations, but these Berry Lemon Peach Ice Tea Popsicles have been our favorite!
This summer we have had to think about our Summer activities differently than we usually do! Usually, we may take a road trip to a surrounding state to enjoy some type of activity or attraction. This year we were planning to go on a vacation of some sort. Nothing big, just somewhere to relax and get away from our daily routines. Luckily nothing was booked, but we started planning and I was looking forward to it because it’s been years since we have been on a full vacation.
Berry Lemon Peach Ice Tea Popsicles
Equipment
- You will need 2 Popsicles Molds
Ingredients
- 3 tea bags
- Juice of 4 lemons
- 2 peaches slices
- 1 1/2 cups frozen berries
- 1/3 cup pomegranate seeds
- 1/3 cup / 80 ml / 2.7 oz sugar cane syrup
- 1 cup / 250 ml / 8.4 oz cold water
Instructions
- Bring 1 cup of water to a boil. Add tea bag then leave to soak for 10 minutes.
- In the meantime, roll 4 lemons on a hard surface with your palm. It will help to make the lemons juicier. Cut lemons in half. Put a strainer on a medium bowl then squeeze lemons.
- Pour lemon juice, syrup, tea, and water in a mixing bowl. Mix with a spoon.
- Prepare popsicles mold. Divide peaches sliced, pomegranate seeds, and berries equally in each mold. Pour ice tea in each mold.
- Freeze overnight before serving.
When I was younger I was the queen of making homemade slushies! I would mix flavors depending on what drinks we had available. Making popsicles took me back to that childhood memory! These popsicles are a lot more detailed than my childhood slushies. However, I hope in making them I’m giving my children the same summer memories that I had as a child!
As long as you have some good popsicle molds, you can get as creative with this process as you would like! Your family will love the different variations of popsicles you can make, it will be fun for everyone!
