I’m sure I’m not the only one that looked to food for comfort last week! Sunday before last I stayed home from church with my mom because she recently had shoulder replacement surgery. I also had plans to meet up with my best friend and her bridal party after she attended the Bridal Show. Instead of leaving church early, I stayed with my mom for a few hours. Those plans were quickly derailed when Emma had a coughing spell at my mom’s house. Emma had been having Asthma issues so I knew what it was, it was time we went to Urgent Care to get some steroids.
On the way there, my sister texted my mom and me with the news of Kobe Bryant, his daughter and the other passengers on the helicopter. With all of the reports coming in my heart sank when we found out the truth about him and the other passengers. I couldn’t focus on the doctor because the news was so shocking! Emma’s appointment only took about 30 minutes. She was diagnosed with a sinus infection, and we quickly picked up her medicine and went home! And probably like everyone else in the world, I have been glued to social media and the television since that day.
If you know me, you know sports has always been my thing! I was a HUGE basketball fan in elementary school, and even though football is my favorite there is still a special place in my heart for basketball! I love going to the games and keeping up the sport!
Aside from the sport…once I found out all of the details I was crushed! And I have been in this same place since! No matter how much I keep trying to move on my heart aches for the Bryant Family and the other families involved!
I know taking care of yourself looks different for everyone! And I know it’s not the healthiest but this week, we needed I needed to be close to family and I need comfort food…so I made some potatoes!
Not all the way bad, but not the healthiest either…but they were DELICIOUS. I can literally eat potatoes at any time and any way. From french fries to mashed potatoes, it never gets old!
Oven Ranch Potatoes
Ingredients
- 24oz Bag Bite-Size Potatoes
- 1oz Ranch Packet
- 1/4 Cup Olive Oil
- Pre-heat oven 400 degrees.
- Slice bite-sized potatoes.
- Pour olive oil into a large mixing bowl.
- Sprinkle in ranch.
- Mix well.
- Add potatoes to mixture and stir.
- Pour ranch coated potatoes on to a large baking sheet and bake for 30 minutes or until potatoes are golden brown.
- Serve and enjoy!
Ranch has become one of my favorite seasonings! Ever since we had the Ranch wings from Walmart (if you’ve never had them, you need to RUN don’t walk to your nearest Walmart), I have started using it on potatoes and some of the meat that I cook as well! It’s great on pork chops, asparagus, and wings!
