Do you ever get tired of eating during the Summer? No, it’s just me! Oh Okay! LOL! I honestly get tired of eating, making dinner, thinking about what we’re going to eat…all of it! But no matter how sick of it I get I know we can’t survive without eating so the show must go on!
In the summer, dinner for my family is VERY informal. A lot of times, I try to pick one day to cook a few meals, then we eat off of them for the week. I do this year-round but in the summer I don’t want the stove on and I don’t want to be standing in a hot kitchen every day. My family eats a ton of fruit on a daily basis but in the summer our fruit intake increases! At any point when you come to my house and we are eating, there is usually some type of fruit on our plates as well.
One of our recent favorites is the Fruit Salad with Honey Orange Dressing! Now I know what you’re thinking, fruit with more sugar on top, but that’s not the case! It’s like the perfect combination of sweet! The honey orange flavor balances the taste from the fruit out!
Fruit Salad with Honey Orange Dressing
Ingredients
Salad:
2 cups green grapes
2 cups sliced strawberries
1-2 kiwi, sliced
1 pint blueberries
1 cup cantelope, cut in chunks
Dressing:
½ cup honey
Juice of one large orange
1 tablespoon sesame oil
1 teaspoon cinnamon
Directions
Combine fruit and berries in a large bowl. Top with ingredients for dressing and stir to coat well.
Makes 8 (1 cup) servings.
What I love about making this particular Fruit Salad is the fact that its good for any occasion. No matter if its a barbeque, potluck at work, or simply your family had a taste for some fruit…this is the perfect fruit salad! It’s also perfect if you’ve forgotten that you need to bring a dish to an event, its a quick and easy recipe to make!
What I love the most is this recipe is one of those recipes that the children can help me make. My daughter loves helping me in the kitchen, my son only wants to help if he sees her and me in the kitchen together enjoying ourselves. They get a kick out taking the fruit off the cutting board and adding it to the bowl with all of the fruit in it.
