Thanksgiving is one of my favorite holidays! For my family spending time together goes further than just seeing each other on Thursday for dinner. We usually stretch our festivities out through the entire weekend.
Friday everyone is able to do their own thing! If we aren’t recovering from our food coma from the day before we may do a little shopping or stop over another family members house to see what goodies they have available…because everyone doesn’t cook the same things. There may be a few of the same items but each person puts their own spin on things.
Since we have little kids, everyone welcomes us with open arms and encourages us to eat! HA! Its good because we don’t have to pay for food but it’s bad in the sense that everyone doesn’t cook the same way I do and usually I end up with heartburn depending on what I eat. For this reason, this is why I keep Nexium® 24HR 42ct Tablets on me, to help with frequent heartburn!
The Saturday after Thanksgiving we usually get together to watch all of the college football games! Since we are in Ohio, the first “BIG” game of the day is the OSU/Michigan Game! Along with that game we are usually watching Alabama as well! We live in Ohio (Im Alumni of OSU) but we all have roots in Alabama!
On game day we try to change the menu up from left overs from Thanksgiving. We often do a Mexican Themed Day! One of my favorite dishes to make is the 7-layer Taco Dip…Refried Beans, Guacamole, Sour Cream, Salsa, Tomatoes, Onions, Cheese and taco seasoning in the refried beans! I love our Mexican Themed Day because I’m not a HUGE lover of leftovers, so by Saturday I am ready for something new to break up eating of Thanksgiving food. I usually go back to it the next day…
7-Layer Taco Dip
Prep Time: 30 minutes
1 (15.5 oz) can refried beans
1 1/2 Tbsp taco seasoning, recipe follows in notes (or to taste)
3 medium ripe avocados or pack of Guacamole
2 Tbsp fresh lime or lemon juice
Salt and freshly ground black pepper, to taste
1 cup sour cream or plain yogurt
1 cup thick and chunky salsa
1 cup finely shredded cheddar cheese (4 oz)
Handful of Grape Tomatoes, diced
2/3 cup black olives, diced
2 – 3 green onions, diced
Directions
In a bowl, using a fork, stir together refried beans with 2 Tbsp water (to reach desired consistency). Mix in taco seasoning. Add Lime Juice or Lemon Juice to Avocados or Guacamole (to preferred taste).
Spoon bean mixture into the bottom of the bowl (be careful not to smear along the edges). Add spoonful of the avocado/guacamole mixture over bean layer and spread into an even layer using the back of the spoon. Next spread sour cream or plain yogurt, and salsa. Sprinkle a layer of cheese, then finish by garnishing with tomatoes, black olives and green onions.
Store in refrigerator and serve with tortilla chips!
