True Story: I SERIOUSLY love Eggs! When I was in middle school I went over one of my friends houses and she made me a scrambled egg sandwich, it was DELICIOUS!!! I already ate eggs but making an egg sandwich (two of my favorite things: eggs and bread) was the best! I ate so many egg sandwiches when I went for my physical my cholesterol was up! Yes, I was like 12 or 13 with high cholesterol from eating eggs!
So being the “quick study” that I am, I realized that I CAN’T eat eggs daily! So I usually limit myself to maybe two a week if that!
A couple of weeks ago I saw someone’s picture on Instagram with Egg Muffins for breakfast; I had seen them before but I decided that I was going to make some of these Egg Muffins with whatever we had in the refrigerator!
We had Spinach, Onions, Orange Bell Peppers and Real Bacon Bits…so I went with this combination, however, I was checking out Pinterest and there so many combination of veggies you can make these with.
I first sautéed the veggies so they weren’t hard when I mixed everything together…
Next I prepped the eggs (beating and adding milk), and mixing the ingredients together…
Once everything was mixed together I poured it into the Muffin Pan…
Next I sprinkled with Cheese before putting them in the oven!
Finished Muffins…
Ingredients:
6 Eggs
Chopped Veggies (about a 1/2 cup each)
1/2 cup of meat (I used Real Bacon Bits)
Cheese (Optional)
Salt and Pepper
1/4 cup skim milk
Directions:
Preheat Over to 400 degrees
Grease your Muffin Tins
Beat Eggs with Salt and Pepper, and Milk
Sautée Veggies and Meat
Combine all the ingredients together and Fill Muffin Tins (fill to 1/4 inch below the top)
Bake 15-20 minutes until the eggs are set and the tops start to brown slightly
And Voila they’re DONE!!!
I pretty much came up with my own combination of how to make Egg & Veggie Muffins. However, next time I will probably use Egg Whites instead of full eggs (you know that whole cholesterol problem…don’t want to go back there). Luckily, I was able to share my muffins with family so I wasn’t eating 6 eggs by myself but an alternative to sharing them would be to freeze them! I will also try different veggies to mix it up a bit…I’m dying to try some with Roasted Red Peppers and Feta Cheese!!
