A few years back when I was in college I remember waking up one morning in my apartment; getting up and going to join Weight Watchers…I was immediately drawn to the practices of Weight Watchers because it taught small ways that make big changes in your diet lifestyle.
One of the things I loved about Weight Watchers is that you could eat whatever you wanted as long as it was in moderation. Depending on what you ate and how much you ate determined how many points you accrued. I also loved the fact that Weight Watchers was coming out with their own food line besides their frozen meals. The items were delicious…I’m still a fan of the Brownies and Cheese.
When my husband and I moved in with each other I remember buying Weight Watchers cheese instead of the usual kind he bought. I actually caught a lot of flack for it because he saw it in the refrigerator, however, once I cooked with it he never noticed a difference! I explained that it taste just as great as the cheese he bought and that it was real and all natural cheese…it doesnt get any better than that!

Mini-Cheesecake Bites
Ingredients
2 (8 ounce) packages cream cheese, softened
2 eggs
2 tablespoons lemon juice
2/3 cup of white sugar (I used Splenda)
1 can of cherry pie filling
Directions
Preheat oven to 350 degrees Fahrenheit
Line mini-muffin baking cups on cookie sheet or muffin pan. Place a vanilla wafer in each one.
In a medium mixing bowl beat cream cheese until fluffy. Add eggs, lemon juice, and sugar. Beat until smooth and thoroughly combined.
Fill each baking cup 2/3 full with cream cheese mixture.
Bake in preheated oven for 15 to 17 minutes. Cool on a rack. Top with fruit pie filling.
