Last week I had the pleasure of trying a recipe out that I found from Family, Food and Travel…her recipe was easy to follow as a guide. I changed a few things to create this into Cherry Coke Cupcakes for my family. Im not a big baker from scratch, so being able to start with box mix and add a few things was perfect for me.
You see, my husband is a HUGE Coca-Cola fan and for our date night in, I surprised him with Cherry Coke Cupcakes. For this recipe I used Coke Zero instead of regular coke, but if you want more of the Coca-Cola flavor you should probably use a regular Coke.
Cake Ingredients:
1 Box Devils Food Cake
3 Eggs
1/3 Cup of Vegetable Oil
1 Cup Coke Zero
1/2 Cup of Maraschino Cherry Liquid
Large Jar of Maraschino Cherries
Icing:
Whipped Butter Cream Frosting
2tbsp Coca-Cola
1tbsp Maraschino Cherry Liquid
Cupcake Topper:
Maraschino Cherries (one for the top of each cupcake)
Directions:
Preheat Oven to 350
Add Wilton Rainbow Bright Standard Baking Cups to Muffin Pan
Mix Cake according to the box, BUT substitute water for 1 Cup Coke and 1/3 Cup of Maraschino Cherry Liquid
Fill Liners 2/3 full and add 1 cherry to the middle of each
Bake according to cake box
Icing:
I purchased Betty Crocker Whipped Frosting – Butter Cream and mixed in 2 tbsp of Coke and 1 tbsp of Maraschino Cherry Liquid…stir it all together and let sit for 15 minutes or so, due to adding liquid it will be a little runny but it will come back together after you let it sit for a few minutes.
Once the cupcakes are cool enough to add frosting to…transfer the frosting to a piping bag and frost each cupcake.
Optional: top each cupcake with a cherry
