Since the holidays I have been a total slacker here on the blog!
Well really I had a good reason! My class gave us a mini break (and you know I took advantage) BUT that meant last week I had to double up on homework and stuff! Yeah so I wont be doing that anymore! I did two weeks of work in like 3 days or so…Boooo!!!
The week of Thanksgiving I planned small meals because I didnt want to have a refrigerator full of leftovers before the holiday.
One of the days we had Chicken Nachos (one of my favorite meals)!
So in preparing my Chicken Nachos…I was almost done and realized that I didn’t have any salsa! Dont You Hate that…I started looking through my cabinets to see what I had to go on these nachos…so I decided to create my own Salsa….
I started with Chopped Onions…
Next Black Beans (I used Organic Canned Black Beans)…
My favorite Rotel Diced Tomato and Green Chilies…
Canned Sweet Corn…
Next you mix it all together…and BAM homemade salsa!!!
This was SOOOOO easy!!! And it was a hit with my husband! I also took some of this over my parents house on Saturday after the holiday because we sit around tailgate and watch football! So think I am going to try a few other flavors next time…but I think I am done buying Salsa!!! Homemade Salsa it is for my family!!!
