So I found this recipe on Pinterest a while back and said I was going to try it but never got a chance until….last night!! My parents took Emma to revival so I had a chance to prepare dinner and do a little bit of homework! This recipe is the Chicken Tortilla Bake with 5 ingredients: Corn tortillas, chicken, cream of chicken, rotel, cheese. Very easy to make!
If you are familiar with Pinterest you know that a picture can be pinned but it takes forever to find the original owner of the picture or the idea! I was lucky in finding the owner because she had pictures on her blog along with the directions…Homemaking Challenged (click the link for the original recipe)!!!
I too took pictures as I prepared the meal!
I first cut up my chicken…I used a pack of Gerber’s Amish Chicken
(the pack had two boneless breast and four thighs)
I seasoned the chicken with Weber Garlic and Herb Seasonings
(these are my favorite seasonings) and if you use them that’s the only seasoning you need!!!
This is Rotel (diced tomatoes and green chilies) and Campbell’s Cream of Chicken Soup

And in the oven it goes! I deviated from the original recipe in that I didn’t cook my chicken first…I put it all in the pan together and cooked it! And I totally forgot to take a picture of the finished product…instead of it being layered I ended up stirring it all together while it cooked because I had to make sure the chicken was done!
Once it was done and mixed altogether…we ate it with Tortilla Chips because it turned out more like a dip instead of a meal! Darrick was happy and said it was good, I thought so myself!!!
